There have been a few requests for this recipe... so here it is!
-5 cups diced potatoes (we like to use the little red potatoes, but anything works)
-3 cups chicken broth
-1/2 cup chopped onion
-1 cup chopped celery
-1 tsp salt
-pepper to taste
Cook all of the above ingredients until veggies are soft. Then in a different bowl..
-melt 3/4 cup butter
-add 3/4 cup flour
Stir together until smooth, then add the mixture to the soup. Then...
-add 1 qt. milk
Heat up stirring constantly. Then...
-gradually add 2 cups grated cheese!
** you can use cream instead of milk if you wish!
