Quinoa

I have recently discovered my love of quinoa (pronounced keen-wah) and it is now one of my favorite healthy meals. You should be able to find it at any grocery store, but I found it at costco. It tastes like a grain, but it is actually a seed packed full of protein. Very delicious!


Ingredients:
2 cups water
1 cup quinoa
1 pinch salt
1/4 cup olive oil
1/2 teaspoon sea salt
1/4 cup lemon juice
1 cucumber, diced
2 bunches green onions, diced
2 carrots, grated
3 tomatoes, diced
1/2 cup feta cheese

Directions:
1. In a sauce pan bring water to a boil. Add quinoa and a pinch of salt. Reduce heat to low, cover and simmer for 15 minutes. Allow to cool to room temperature; fluff with a fork.
2. Meanwhile, in a large bowl combine olive oil, sea salt, lemon juice, cucumber, green onions, carrots, tomatoes and feta cheese

Note: This recipe is very versatile. Sometimes I like to add cilantro and soy beans but you can alter it to include what you like.
