Warm Chocolate Melting Cake

If you have been on a Carnival Cruise before then you may be fond of this little dessert on their menu.  I know me, Brynn, and Jenny each devoured one every night of our cruise.  I still think about this dessert.  In fact, I made it last Valentines for Josh and I and it did not disappoint.  You guys, the middle is melted! (!!!)

8 oz. semisweet chocolate
1 c. butter
7 eggs
6 T. sugar
1/2 c. flour

Preheat the oven to 375F. Melt chocolate and butter together; cool to room temperature.

In a separate bowl, whisk 4 eggs with sugar. Add flour and mix. Add remaining 3 eggs. Add egg mixture to chocolate/butter mixture and pour into six 8-oz. ramekins coated with nonstick spray.

Bake until top of cake is just set and inside is still melted - about 10 minutes. Dust with powdered sugar and serve with vanilla ice cream!

Ice Cream Cake

My sister made this for the Super Bowl and it was delicious! There is no reason to ever buy an ice cream cake again.



Ingredients:

1/2 cup hot fudge ice cream topping, warmed
8 oz. tub Cool Whip, thawed, divided
3.9 oz. pkg. JELL-O Chocolate Instant Pudding
8 OREO Cookies, chopped (about 1 cup)
12 vanilla ice cream sandwiches

Directions:
POUR fudge topping into medium bowl. Whisk in 1 cup Cool Whip. Add dry pudding mix; stir 2 minutes. Stir in chopped cookies

ARRANGE 4 ice cream sandwiches, side-by-side, on 24-in-long piece of foil, top with half the Cool Whip mixture. Repeat layers. Top with remaining sandwiches. Frost top and sides with remaining Cool Whip. Bring up foil sides, double fold top and ends to loosely seal packet.

FREEZE 4 hours or until firm.

Delicious Banana Cake


Old Fashioned Banana Cake with Cream Cheese Frosting

3 very ripe bananas, mashed


3/4 cup granulated sugar


1/2 cup light brown sugar, lightly packed


1/2 cup vegetable oil


2 extra-large eggs, at room temperature


1/2 cup sour cream


1 teaspoon vanilla extract


2 cups all-purpose flour, after sifted


1 teaspoon baking soda


1/2 teaspoon kosher salt


powdered sugar for sprinkling on top


1/2 cup coursely chopped walnuts (optional)


cream cheese frosting (optional, recipe below)




Preheat oven to 350 degrees. The recipe says to grease and flour a 9 x 2-inch round cake pan or line the pan with a piece of parchment or wax paper cut to fit inside the cake pan. I just used a jelly roll pan (a sheet cake pan) and it turned out great. Spray the pan lightly with cooking spray




Mix bananas, granulated sugar and brown sugar in bowl with an electric mixer on low speed until combined. Add oil, eggs, sour cream and vanilla. Mix until smooth. Add flour, baking soda and salt. With mixer on low, mix just until combined. Stir in chopped walnuts if using. Pour batter into prepared pan and bake for 40-45 minutes, until toothpick inserted in the center comes out clean. Cool in pan for 5 minutes, turn out onto cooling rack (since I used a jelly roll pan I just left the cake in the pan).




Serve warm sprinkled with powdered sugar, or cool completely and top with Cream Cheese Frosting.




Cream Cheese Frosting




6 ounces cream cheese, at room temperature


6 tablespoons unsalted butter, at room temperature


1 teaspoon pure vanilla extract


2 1/2 cups sifted confectioners' sugar (1/2 pound)




Mix cream cheese, butter and vanilla in the bowl of an electric mixer fitted with paddle attachment on low speed until just combined. Don't whip. Add sugar and mix until smooth.

Homemade Donuts


Ingredients:

Oil for frying
Canned buttermilk biscuits
1 teaspoon ground cinnamon
1/4 cup sugar

Icings:

2 cups confectioners' sugar, divided
5 tablespoons milk, divided
1 teaspoon vanilla extract
1/4 cup cocoa powder

Directions:

Heat oil for frying. In a shallow bowl, stir together the ground cinnamon and sugar and set aside. In a small bowl, mix together 1 cup of confectioners' sugar, 2 tablespoons of milk and 1 teaspoon of vanilla extract, set aside. This is the vanilla icing. In another bowl, mix together 1 cup of confectioners' sugar, 1/4 cup of cocoa powder and 3 tablespoons of milk and set aside. This is the chocolate icing.

Lay out the biscuits on a cutting board and cut out a hole from the middle of each biscuit. I have found bottle caps to be the perfect size. Fry them in the oil until golden and then flip with tongs to fry the other side. You can even fry the donut holes. Drain on paper towels and then toss in the cinnamon-sugar or icing.

Note: We usually just make the vanilla icing because it is the best one, but you may want to try the others. Enjoy!

Molasses Cookies

These cookies are honestly delicious! You have to try them!

-3/4 cup margarine (melt and let cool)
-1 cup sugar
-1/4 cup light molasses
-1 egg
-1/2 tsp. cloves
-2 tsp. baking soda
-1/2 tsp. ginger
-1 tsp. cinnamon
-1/2 tsp. salt
-2 cups flour

Bake at 375 degrees, for 5-6 minutes.
I promise you won't be disappointed!

Most delicious Choco Chip Cookies!

Okay so this makes a ton! I always cut the recipe in half and it's the perfect amount!

1/2 lb. butter, softened but not melted (2 sticks)
1/2 lb margarine, softened
1-1/2 c. sugar
2 c. firmly packed brown sugar
3 eggs
2 T. real vanilla extract
6 c. flour
1-1/2 tsp. salt
1-1/2 tsp. baking soda
3-4 c. milk chocolate chips

In mixer combine ingredients in the following order: sugars, margarine, butter, eggs, vanilla, dry ingredients, chips.  Bake at 350 for 8-10 minutes.  

I usually cook them for about 9 minutes, it keeps them a little soft! And when I am cutting the recipe in half with the 3 eggs I put two in and then put the third egg in a separate bowl and mix the egg and then just pour about half of that into the mix.

Texas Sheet Cake

Melt:
2 sq. Margarine
1 C Water
3 T Cocoa
Cook to boiling.

Add:
2 C Flour
2 C Sugar

Add:
1/2 C Buttermilk
1 tsp. Soda
1/2 tsp. Salt
2 Eggs
1 tsp. Vanilla

Bake 400 degrees for 20 minutes.

Frosting:
1 sq Margarine
6 T Milk
3 T Cocoa
Cook til boiling.
Add 4 C Powdered Sugar
