Salsa Chicken

This is one of my easiest recipes... and it is delicious! You literally just throw everything in the crock pot! Here it is:

-frozen chicken breasts (anywhere from 3-6 depending on how many people you are serving)
-1 can of Mexican-style tomatoes
-1 can black beans
-1 pkg taco seasoning
-a drizzle of olive oil
-1 Tbsp. lemon pepper
-1/2 jar of apricot jam (the 18 oz. jar)

*Cook in the crock pot on high for 6 hours. After the six hours, take the chicken breasts out and shred them (I use two forks to shred=really easy), then put back into the crock pot!
* You can serve it in tortillas, or just over lettuce like a salad.
* Top with salsa, sour cream, ranch, tortilla chips, rice, cheese, etc. Whatever you'd like!
*(if you make 6 chicken breasts-- it serves 6 people/or provides lots of delicious left overs)
